pink strawberry cake

This recipe is perfect for those who don’t like heavy, overly sweet cakes. You don’t need much skill to make it beautifully ✨ Looks gorgeous, and it’s perfect for celebrations and to give as a gift!

Sponge cake

4 egg whites

2 egg yolks

100g sugar

120g cake flour

30g butter

50g whole milk

pink food coloring

Cream

450 g heavy cream

50 g sugar

A pound of strawberries

6 inch square cake pan, lined with parchment paper

preparation

create a water bath with freshly boiled water

combine eggs and sugar in a bowl, preferably in a metal mixing bowl. Place into hot water bath until temperature reaches about 40°C (104°F).

Beat with a hand mixer until you reach ribbon stage.

add sifted flour and fold in gently until no lumps remain.

heat the milk and butter in the microwave until the butter is fully melted. Then add some of the batter mixture to it, mix well, and pour everything back into the batter mixture. Mix evenly.

add in pink food coloring if desired. I used 2-3 drops of super concentrated food coloring from Michael’s.

pour into a lined cake pan, gently tap out bubbles, and & bake in a preheated over @ 320°F for 30 – 35 minutes. Insert toothpick in the cake to make sure it’s fully cooked before taking it out.

let cake cool completely on a wire rack. Take off parchment paper as soon as it comes out.

slice into 3 layers once fully cooled.

For the bottom 2 cake layers, spread whipped cream evenly & arrange sliced strawberries.

cover with more whipped cream before adding next layer of cake.

Once you reach the top layer, fill any gaps with whipped cream, cover with plastic wrap, & chill in the fridge for a few hours.

After chilling the cake use a hot knife to cut off the sides of the cake.

pipe whipped cream along the borders of the cake.
